Vegan with a Large Family

the boys said they would be eating pinto beans for breakfast, lunch and dinner until they are gone. "They are sooo good mom." Good grief. I made up a pressure canner full (22 quart pot)-half of it was gone in one meal. Anyone want some growing boys at their house?

I think I will be having oatmeal with strawberries.

BBQ Potatoes and grilled veggies

BBQ Potatoes

BBQ sauce

Start the grill. Scrub some taters. Cut into rounds, nuke for 3-5 minutes. You are starting the cooking process. Slap 'em on the grill. Turn once. Coat with BBQ sauce. Grill 'em a little bit longer.

Grilled Veggies
I just like all sorts of veggies done on the grill. Summer squash, zucchini, mushrooms, onions and pepper. I use a veggie tray so they don't fall through the grate. I just use salt and pepper on them. Corn is good this way too.

What do you use to season/flavor your pinto beans with? I used to use bacon or ham but am a loss as to what I could use now...Care to share your recipe? Thanks....Sheila xx

  • On this day, it was plain pinto beans with salt. Honest.

Other days we use a dry onion soup pack added to the beans but DH's favorite is plain with salt.

If your family is used to the smoky flavor of bacon or ham you could try a couple drops of liquid smoke.
