Scalloped Potatoes and Corn, green salad, bread
Puddy's Fruit Jumble
1 carrot shredded
1 apple chopped, I just shredded it after I shredded the carrot
1/2 - 1 small can crushed pineapple in its own juice (some of the juice)(keeps the apple from browning)
1 small can Mandarin orange slices (drained and rinsed)
Mix all together and enjoy. I was thinking that raisins and nuts would be good too for an occasional treat.

potatoes, peeled and sliced
onion, peeled and sliced thin
frozen kernel corn
flour
salt and pepper
unsweetened soy milk
Layer potatoes in bottom of pan (I use a huge 11x18 pan-I think it is a roasting pan. I make enough for a meal the next day.) Top potatoes with a layer of thinly sliced onions, then corn, sprinkle with flour (it is 2-4 T.), salt well and pepper. Repeat to make 3 layers. Adding the milk is the tricky part-you don't want it too dry and you don't want it too runny. I add milk to a third or halfway up the side. Cover and bake at 350 until potatoes are done about 40-50 minutes.
